Ingredients
- 1 lb ground beef
- 1 Tbsp canola oil (or olive oil)
- 1 large onion, finelt chopped
- 2 celery stalks, cubed
- 2 large carrots, cubed
- 32 oz chicken broth
- 2 cups water
- 1 cup kidney beans, drained and rinced
- 14.5 oz can diced tomatoes
- 3 Tbsp ketchup
- 2 garlic cloves, minced
- 1 cup fresh spinach, chopped
- 1 cup uncooked Ditalini pasta
- 3 tsp table salt
- 1/4 tsp ground black pepper
Instructions
- In a Dutch oven, cook the beef with 1 Tbsp oil.
- Finely chop onion. Add to the beef and cook until tender.
- Cube the celery and carrots into small cubes. Add to the beef and onions. Cook 6-8 minutes, until vegetables are tender, stirring as needed.
